Mathematical tables tell me that 5 outstanding cards will split 3-2 with a frequency of 67.83%, 4-1 with a frequency of 28.26% and 5-0 with a frequency of 3.91%. I'm wondering what the odds are that, out of 5 8-card fits (in a set of 12 hands), the outstanding cards will split 5-0 twice, an incidence of 40%. For the record, on the remaining hands the splits were 3-2 twice and 4-1 once.

Using your percentages without verifying... your question asks simply about the frequency of 5-0 splits, so the 4-1 and 3-2 can be lumped together as "others"... The chance of having exactly 2 5-0 splits out of 5 8-card fits is 1.3564%; the chance of having at least 2 such splits in 5 chances is 1.4127%.
