1♣-(1♠)-2♣ strong; natural; 5+ diamonds invitational+
2♥-P natural non-fitting min
I'm not entirely sure how the auction would go after the 2♣ bid by responder. Opener could complete the transfer, suggesting a minimum with either a fit or no better bid (then responder might pass or invite with 2N), or opener could bid 2♥ showing a good suit and a minimum (after which responder might pass or bid 2N).
ETA: responder wouldn't pass if opener accepted the transfer. Here he would bid 2N, natural invite.

2NT 3♣
3NT pass
2NT = 18-20
3♣ = muppet stayman
3NT = 5-card heart

Doesn't it seem pushy with the N hand to GF with 7 vs 16+? Sure, distribution is good but with length in their suit, there's no fit yet and it seems premature to upgrade especially without major length. I admit I would have been in 3N by S uncontested on an accepted NT invitational sequence, but the interference caught both hands at the top of their "minimum" ranges (5-7, 16-18) so when it looked like a misfit we just bailed.

Yeah, though opener more often is 17+ balanced. A reason not to bid is that they are going to try to knock out our spade ace which is the entry to the hand if we can establish diamonds. Trouble is I thought about that after seeing the defending hands. Happy to go with the pass first auction.
I think your South ought to show the hearts. Btw what's South to do with a hand that wants to force? I would think 2H is forcing for a round or you have difficulty with strong hands...and hands with hearts and another feature (diamonds, stopper, clubs).

2♥ - 2N
3N
North's other choice was to X showing 5-7 any, but with a good 7 and stopper in their suit, it seems OK to stretch.

I don't have everything worked out for that sequence, but the premise is that responder will bid again if opener completes the transfer (often 2N or a self-raise lacking GF values). Consequently when opener rejects the transfer, it's showing a hand that wants to strongly suggest a different strain and stopping low.

1♣ (16+) - (1♠) 2♦ (Natural 6+ hcp) -
2♥ (5+♥ & 1 round force) - 2NT -
3NT all pass
Note: Sometimes the opponent's win.

1♣ (16+) - (1♠) - 2♣ (diamonds)
2♥ (nat, F1) - 2nt
Pass
Opener's hand is slightly above minimum but has no help in spades. Combined with partner's failure to GF or bid 1nt (natural) at first turn, it seems like passing 2nt is a better choice. Of course it is possible we get to 3nt in a variety of ways too.
We do not play 2♦ by opener as forcing. Opener could bid 2♦ here (it is typically 17-19 balanced) but it seems worthwhile to introduce the good heart suit.
