If fact my partner doubled to show 8+ points, so now I have a dilemma

Any thoughts about what should happen

Normally, when the opps have bid (or implied) 2 suits, a cue bid is telling rather than asking. So perhaps your partner should have bid 2♠, and then you could bid 2NT (not 3NT, which should show a better hand unless you play that the jump denies slam interest).

I would probably just bid 1NT with your partner's hand, showing a GF hand with stops in both suits (unless 1NT shows something different).
