Playing roth/stone openings 14+ very often is a different story.

Yes, you expected this when you bid 1S. I would give preference to 2H. This is far from ideal, but you have little option.
Yes you may have a C fit, but the world is far from perfect and your first duty is to try and find a Major suit fit.
An immediate 2C bid rather than 1S is very poor and anyone bidding this should be forced to hand in his player's licence and re sit the exam.

Without the double by RHO things are messier and I have to bid 1♠ and preference to hearts (ugh).

Hmm, I don't know of many players who still play an omnibus xx. This is really a bid from Noah's book of bridge bidding.

So I would say this still seems to be the modern standard, not just some old-fashioned treatment.

1♥ (dbl) 1♠ (pass)
2♦ (pass) ..?
you have 2 choices: go back to 2♥ and pray or bid 2♠ and cross your fingers
Note that the first priority is to keep the bidding low, as that's the best strategy on a weak misfit. If, for some reason, opener manages to find another bid, e.g. 2NT, now you can introduce your clubs.

I wouldn't recomend it here, though, since your clubs are not good enough to introduce at the 3-level. 1♠ and then 2♥ is fine. On a good day, partner will bid 2♠ or 3♣ as his third bid.

1♠ is perfectly normal and 100% correct bid (some people play a convention here called kaplan inversion, but this is not a good thread to discuss that bid).
Over 2♦, you should take preference back to 2♥, simply because 3♣ is forcing and you are no where near strong enough to bid 3♣, and your spades are no where near strong enough to rebid. Change your hand to...
Kxxx
x
xx
AJxxxx
And you would still take "preference" back to 2♥
